Ginger Miso Soup With Lentil Noodles

I absolutely loved this creation. It’s ginger miso soup with kale, napa cabbage, lentil noodles, mushrooms, kimchi, and sesame seeds.

This quick and easy meal is loaded with nutrients, especially antioxidants like vitamin C - great for your skin and helps speed recovery!

Ingredients
3 C water
1 C kale, chopped
1 C napa cabbage, chopped
½ C mushrooms, chopped
1 bundle of lentil noodles
1 tsp cumin
1 Tbsp fresh ginger, thinly sliced
1 tsp powdered ginger
2 Tbsp extra virgin olive oil
2 Tbsp coconut aminos
4 Tbsp vegan kimchi
2 tsp sesame seeds

Instructions
Pour the water into a large pot. Bring to a boil over a medium-high flame. Add the ingredients except for the kimchi and sesame seeds. Allow the vegetables and noodles to soften. Remove from the stove. Serve the mixture into bowls. Garnish with the kimchi and sesame seeds. Makes 3 servings.
